Recipe for easy zucchini and gamberetti (prawn) pasta

This recipe is a family favourite, even our 8 year old son adores it. It is also a good way to get children to eat some seafood and vegetables. When I started working with Alessia 15 years ago and was living in Italy for the first time, I was quite keen to learn some easy and quick recipes, especially pasta dishes. Italians make it look so easy and simple… and it is when you know what you are doing. From a few quality ingredients you can make wonders.

Alessia, who became my dear friend, claims that she is hopeless in the kitchen and never really cooks. She loves food of course, but prefers to dine out. Fair enough! So she suggested that I ask someone else about Italian cuisine. However she said “There is one recipe that I am good at making and it is so easy that even I can do it – “pasta with zucchini e gamberetti”. So, there we are, after 15 years we have made it a quite a few times!

Our favourite pasta to use for this recipe is the Ligurian ‘Trofie’, a short, thin, twisted pasta typically served with pesto sauce.

Ingredients for zucchini and gamberetti pasta

500 g pasta trofie (normally 150-200 g per person), 3 large zucchini, 300 g small cooked prawns (also frozen are fine), salt and black pepper to taste, 2/3 tbsp of extra virgin olive oil.

How to prepare it

First chop the zucchini into small pieces. Pour the olive oil in a saucepan, slightly heat it and add the zucchini. Fry the zucchini until it almost gets mushy and then add the prawns. If you are using frozen ones, it is best to defrost them first, depending on what type you use. But if you do not have time to defrost, run the bag of frozen prawns under some warm water and then drain them.

Fry the prawns together with the zucchini for about 5-10 minutes string it often. Season it with salt and black pepper to your taste. If you want to play around with it a bit you could add some lemon juice, some chilli flakes and also some crushed garlic to the frying zucchini before adding the prawns.

In the mean time cook the pasta according to its instructions. When you drain the past save some cooking liquid as it is perfect to make your sauce a bit more runny and creamy. Mix the zucchini sauce with the pasta and cook them together for another 5 minutes.

Serve with or without some grated Parmesan cheese and some freshly ground black pepper.
